Squash Casserole - KOAM TV 7

Squash Casserole

Serves 8 to 10 people

  • 2 1/2 lbs. Small yellow crook neck  
  • squash, sliced    (about 8 cups)
  • 1 large onion, chopped
  • salt and pepper, lightly
  • Water to cover

Boil together until tender & drain.

Meanwhile, combine:

  • 1/2 stick sliced margarine
  • 1 egg
  • 6 oz sharp cheddar cheese, grated (about 2 cups)
  • 15 saltine crackers, crumbled
  • 1 can cream of mushroom soup
  • 1 small can french fried onions

Add drained squash and onion mixture to the above ingredients and mix well.  Put in well-greased 9 x 9 dish.   Bake at 350 degrees for 35 to 40 minutes.  Sprinkle 1 small can french fried onions over casserole during last 5 minutes of baking.
