Caramel Nut Bars

Ingredients

  • 1 package (two layer 18.25 oz) cake mix
  • 1 cup rolled oats
  • ½ cup peanut butter
  • 1 egg
  • 2 tablespoons soy milk
  • 1 package (8 oz) soy cream cheese
  • ½ cup caramel ice cream topping
  • 1 cup milk chocolate pieces
  • ½ cup roasted soy nuts

Directions

  1. Combine in large bowl, cake mix and oat meal.
  2. Add peanut butter and blend until mixture resembles coarse crumbs. 
  3. Add egg and soymilk; blend thoroughly. 
  4. Reserve ¾ cup of mixture. 
  5. Press remaining mixture into bottom of greased 13x 9x2-inch pan. 
  6. Combine cream cheese and caramel topping until smooth. 
  7. Spread on top of crumb mixture.
  8. Sprinkle with chocolate pieces and roasted soy nut and remaining crumb topping.
  9. Bake at 350 degrees for 30 minutes.

Makes 24 bars.
