Corn & Zucchini Melody

Ingredients

  • 4 slices bacon
  • 2 cups chopped zucchini
  • 1 ½ c fresh corn kernels
  • 1 small onion, chopped
  • 1 pinch pepper
  • ¼ c shredded cheese

Directions

  • Cook bacon in deep skillet until evenly browned over medium-high heat.
  • Reserve 1 T of drippings.
  • Drain & set aside.
  • Saute zucchini & onion in bacon drippings until tender but still crisp, about 10 minutes.
  • Season with pepper.
  • At the last minute add corn kernels & stir to heat through being careful not to cook long—1-2 minutes.
  • Top with chopped bacon & shredded cheese.
