Tortellini Soup (aired 1/13/2011)

• 1 lb Laughing Rooster Farm Original Brats, taken out of casing
• 3-4 cloves garlic, minced
• 1 c onion, chopped fine
• 2 medium zucchini or yellow squash, diced

Cook together until brats are cooked through.

Add:

• 2 c chicken broth
• 1 1/2 c water
• 1 can diced tomatoes
• 1 tsp oregano

Simmer for 1 hour.

Add 1 or 2 packages tortellini and cook for additional 15 minutes.

Serve with lots of fresh grated Parmesan cheese!
