
Crocktober Week 2 Winning Recipe

1 bag frozen hash browns (32 oz.)
1 lb bacon, cooked and crumbled
1 medium onion, diced
1 green bell pepper, diced
1 1/2 c cheddar or monterey jack cheese, shredded
1 dozen eggs
1 c milk
1 teaspoon salt
1 teaspoon pepper (more or less to taste)
Place a layer of frozen potatoes on bottom of crock pot, follow with a layer of bacon, onions, green pepper, and cheese.
Repeat the layering process two or three more times ending with a layer of cheese.
In a medium mixing bowl beat the eggs, milk, salt and pepper together with a fork.
Pour over the layered ingredients in crockpot.
Cover and cook on LOW for 8 to 10 hours.
