- 8 eggs
- 1/2 cup flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 3 cups shredded Monterey Jack cheese
- 1 1/2 cups cottage cheese
- 2 cans mild green chilies, drained and chopped
- Beat eggs until light, add flour, baking powder and salt to the eggs.
- Fold in cheese, cottage cheese and chilies.
- Bake in a glass dish (9x12) for approximately 40 minutes at 350 degrees.
- Allow to stand for 10 minutes and cut into bite size pieces, normally 30-40 per pan.
