Pumpkin Pie Oatmeal
1 1/2 cups regular oats (not quick oats)
1 to 1 1/2 cups water
1 3/4 cups milk
1/8 cup maple syrup
3/4 cup pumpkin puree or 1 1/4 cup diced fresh pumpkin
1 apple
1 tsp vanilla
1/4 tsp salt
1 1/4 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp allspice
1/8 tsp ginger
1/8 tsp cloves
1 Tbl butter (optional)
1/2 cup pecans (optional)
Coat inside of slow cooker with non-stick cooking spray. If using fresh pumpkin, dice pumpkin. Peel and grate apple. Add water (1 cup if using diced fresh pumpkin or 1 1/2 cup if using pumpkin puree), milk, syrup, oats, pumpkin, apple, vanilla, butter (if desired), salt, and seasoning to slow cooker and stir. Set slow cooker to lowest setting for 5-8 hours (do not leave past 8 hours; pumpkin will burn). Serve/top with whole or chopped pecans and cinnamon.
