Ingredients
- 1 1/2 cups soy flour blend
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup sauteed onion
- 1/2 cup bacon crumbles
- 1/2 cup soy margarine, melted
- 1/2 cup soy milk
- 2 eggs, beaten
Directions
- Combine soy flour blend, sugar, baking powder and salt in mixing bowl.
- Add onion and bacon; stir to coat.
- In separate mixing bowl combine, margarine, soy milk and eggs.
- Add to dry ingredients; stir only until dry ingredients are mixed.
- Pour into greased muffin pan or liners.
- Bake at 400 degrees for 18 to 20 minutes until wooden pick inserted comes out clean.
Makes about 12 muffins.
