Spicy sausage & bean soup

Ingredients

  • 1 pound bulk Hot Italian sausage
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 teaspoon minced garlic
  • 2 cups chicken broth
  • 1 (15 oz.) can yellow soybeans, rinsed and drained
  • 1 (15 oz.) can black soybeans, rinsed and drained
  • 1 (15 oz.) can pinto beans, rinsed and drained
  • 1 (15 oz.) can diced tomatoes
  • 1 (12 oz.) package cut okra
  • 1 (10 oz.) can diced tomatoes and green chilies
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • Parmesan cheese, shredded

Directions

  1. Cook Italian sausage, onion, green pepper and garlic in 4-quart soup pot until sausage is browned.
  2. Add 1 cup chicken broth and stir to loosen any brown bits from bottom and sides of pan; add remaining chicken broth, yellow soybeans, black soybeans, pinto beans, tomatoes, okra, diced tomatoes and green chiles, Italian seasoning and salt; simmer 30 minutes
  3. Garnish each serving with grated Parmesan cheese.

Makes 4 to 6 servings
