Artisan bread tomato sandwiches recipe

Artisan Bread Tomato Sandwiches

1 loaf artisan bread, cut into slices
2 pounds ripe tomatoes, sliced
1/3 cup fresh basil leaves

Vinaigrette:
3/4 cup extra virgin olive oil
1/4 cup white wine vinegar
1/2 cup crumbled blue cheese
1 tablespoon Dijon mustard
Salt and pepper to taste

Whisk oil and vinegar together along with mustard to create in emulsion (or, combine in a jar and shake)...stir in blue cheese. Set vinaigrette aside.

Toast artisan bread if desired. Layer one slice of bread with slices of tomato and basil leaves. Top with vinaigrette and additional salt and pepper if desired. Place another slice of bread on top. Serve as-is or grilled.
