Gazpacho Recipe

GAZPACHO

2 cloves garlic, minced
1 onion, chopped
1 lg cucumber, diced
6 tomatoes, chopped
1 zucchini, chopped
2 stalks celery, diced
1 banana pepper, diced
1 jalapeño (optional)
1 qt tomato juice
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons sugar
Sour cream or creme fraiche (for garnish, optional)

Set aside the banana pepper and 1/4 cup of the cucumber for garnish. In food processor or blender combine all of the vegetables with tomato juice, olive oil, sugar, and vinegar. Purée until ingredients are evenly combined. Chill before serving. Top each bowl with diced banana pepper and cucumber, and dallop of sour cream or creme fraiche if desired.
