Couscous salad recipe

COUSCOUS SALAD

1 cup couscous

1 1/3 cups water

1 tablespoon olive oil

Prepare couscous by heating the water in a microwave-safe bowl until it begins to boil.  Remove from microwave.  Add couscous and stir.  Cover for 3-5 minutes.  Fluff couscous with fork.

 

Sweet version, add:

1-2 tablespoons local honey

1/3 cup raisins or fresh grapes

1/3 cup dates

1/3 cup fresh apples, chopped

1 teaspoon lemon juice

Pinch of salt

 

Savory version, add:

1/3 cup plum or cherry tomatoes, diced

1/3 cup cucumbers, chopped

1/3 cup zucchini or yellow squash, chopped

1 teaspoon red wine vinegar

½ teaspoon salt

½ teaspoon black pepper
