HIGH ENERGY TRAIL MIX

Great after school snack and easy to tote to ball games and after school activities!

¼ cup honey

1 cup vanilla soy protein powder

½ cup soy nuts

½ cup mixed dry fruit bits

½ cup candy-coated milk chocolate pieces

Preheat oven to 300°F. Place honey is microwave safe bowl and heat in microwave just to liquefy about 30 seconds. Add vanilla soy protein powder and soy nuts; thoroughly combine. Spread honey soynut mixture evenly on a nonstick baking sheet or baking sheet lined with parchment paper. Bake about 10 minutes, stirring every two minutes until lightly browned and crumbly. If the nuggets are sticky, return to the oven and bake 1 minute longer. Remove from oven and let cool completely. Combine cooled honey soynut mixture with dried fruit and candy. Makes 3 cups
