Summer squash cobbler recipe

SUMMER SQUASH COBBLER

8 cups peeled squash

1 cup lemon juice

2 cups brown sugar

2 teaspoons cinnamon

½ teaspoon nutmeg

4 cups all-purpose flour

1 cup white sugar

1 cup butter

¾ cup oatmeal

 

Preheat oven to 375 degrees F.  Cut squash in halves and microwave on high for 5 minutes.  Chop squash into small pieces, and cook on stovetop with lemon juice over medium heat.  Add 1 cup of the brown sugar, cinnamon, and nutmeg, and cook for one minute.  Remove from heat.

In a large bowl, combine flour, the remaining brown sugar, white sugar, and oatmeal.  Cut in butter until the mixture resembles coarse crumbs.  Spread 1/3 of mixture in bottom of greased 9 x 13 baking pan, combine 1/3 of mixture with squash, and set 1/3 of mixture aside.  Layer squash on top of the flour mixture in pan, and crumble the set-aside flour mixture on top of the squash.  Bake for 35-40 minutes at 375.  Serve warm with ice cream/whipped cream and a sprinkle of cinnamon.
