Frozen Watermelon Bars Recipe

FROZEN WATERMELON BARS

Base:

2-3 lbs. of watermelon
1/2 cup sugar
2 tablespoons fresh lime juice

Topping:
1 can sweetened condensed milk
1 teaspoon grated lime zest
1/2 cup fresh lime juice
1/2 cup heavy cream (chilled)

Line a 9" x 9" square pan with plastic wrap and freeze. Coarsely chop watermelon and blend until there is approximately 2 1/2 cups in blender. Add sugar and lime juice and blend for around 30 seconds. Pour mixture into baking pan, smoothing top. Put in freezer at least 1 hour. Combine condensed milk, lime zest, and lime juice. Beat heavy cream until it holds stiff peaks, and fold in the milk mixture. Spread over now-frozen sorbet, smoothing top. Freeze at least 2 hours. Serve as bars on cold plates with sprig of mint.
