Veggie Breakfast Burrito Recipe

EASY VEGGIE BREAKFAST BURRITOS

4 eggs
1 onion, chopped
1 tablespoon garlic, minced
2 pepperoncini peppers (or other sweet-hot pepper), diced
1 tomato, chopped
2 burrito-sized flour tortillas
1 teaspoon olive oil
Salt & pepper

Warm olive oil over medium heat in skillet. Warm a second skillet to low heat. Saute onions and garlic until just transparent, about 3-4 minutes. Add peppers and stir for one minute. Whisk eggs with fork in a separate bowl, adding salt and pepper, and pour onto onion/pepper mixture. Reduce heat to low. Stir eggs. Once eggs begin to form curds, add tomatoes and cover mixture, cooking for 1-2 minutes.

In second skillet, place one tortilla to warm, flipping after 30 seconds. Repeat with second tortilla.

When egg is fully cooked, place half the mixture in each tortilla. Top with cheese and/or hot sauce (if desired) and wrap tortilla, leaving one end open.
