OVEN ROASTED SWEET POTATO FRIES
One large sweet potato
1 tsp sea salt
1 tsp black pepper
1 tablespoon olive oil
Preheat oven to 450. Wash the sweet potato thoroughly and towel off until dry. Cut sweet potato in half, then into 1/2 inch-thick planks, and finally into 1/2 inch thick sticks. Place sticks onto a non-stick baking sheet (lighter color is preferable). Cover with the olive oil, and then toss until oil is on all sticks. Sprinkle sea salt and grind black pepper over the top of the sweet potato sticks, and arrange sticks such that none are touching on the baking sheet. Bake for 15 minutes, then remove and toss the fries. Return to the oven for 10-15 more minutes.
Serve with topping of spiced pear jam, apple jam or honey.
