Jalapeno Cheese Bratwurst Breakfast Tacos Recipe

JALAPENO CHEESE BRATWURST BREAKFAST TACOS

1 package, Sunshine Farms jalapeno cheese bratwurst
1 green bell pepper
1 red bell pepper
1 onion
1 teaspoon olive oil
6 eggs
6 flour tortillas (warmed)
1 cup shredded cheese

Optional toppings:

Lettuce
Salsa
Sour cream
Guacamole

Slice peppers, onions, and bratwurst into strips. Heat oil in large skillet over medium-high heat. Add peppers, onions, and bratwurst, sauteing for 8-10 minutes (or until sausage is cooked).

Crack eggs into mixing cup and beat with salt and pepper until combined. Pour mixture into smaller skillet over medium heat, preparing as scrambled eggs.

Assemble tacos beginning with egg on bottom, followed by vegetables and bratwurst, then cheese. Top, if desired, with lettuce, salsa, sour cream, and/or guacamole. Serves six.
