QUICK & EASY BEEF STROGANOFF
1 lb. ground beef
1 medium onion, chopped
1/4 cup butter
2 tablespoons flour
1 teaspoon salt
1 garlic clove, minced
1/4 teaspoon black pepper
1/2 lb. fresh mushrooms, sliced
1 can, cream of mushroom soup
1 cup sour cream
2 cups hot cooked egg noodles
In large skillet, cook beef and onions until tender. Drain off about half of the juices. Add butter, garlic, and mushrooms.
Cook 3-5 minutes until mushrooms begin to get tender. Gradually stir in flour, salt, and pepper.
Cook 3-5 minutes more, stirring until thick.
Add soup, simmer 5-10 minutes, stirring frequently.
Blend in sour cream and remove from heat. Serve over hot noodles. Garnish with parsley.
