VALENTINE'S DAY STIR-FRY
2 tbsp Olive Oil
1 tbsp minced garlic
1 onion, chopped
3 ribs celery, chopped
1 carrot, chopped
1 red bell pepper, sliced
½ lb. asparagus, cut into 1 in. pieces
1 tsp soy sauce
¼ tsp each cardamom, cinnamon, coriander, nutmeg
Crushed red chili pepper to taste
Avocado & fresh basil to garnish
Place oil in very hot wok. When oil is ready, toss garlic, onion, carrots, and celery in wok until onions begin to brown.
Add pepper, toss for two minutes. Add asparagus, soy sauce, and spices, tossing for three minutes longer until asparagus is crisp-tender.
Place stir fry on small bed of brown rice, quinoa, or millet.
Top with two slices of avocado and a sprig of fresh basil to serve.
