FLATBREAD BREAKFAST CALZONES
6 beaten eggs
4 round flatbreads (6" diameter)
¾ cup shredded cheese (mozzarella or farmers' cheese works best)
1 tsp. olive oil
8 oz. grape tomatoes, halved
½ cup spinach leaves
Fresh basil (if desired)
Salt & pepper to taste
Preheat oven to 450. Pour eggs into preheated skillet over medium-hot heat, bringing cooked egg into the middle with a spoon in a folding motion, releasing uncooked egg to the sides of the pan.
Place flatbread onto a baking sheet. Once eggs are cooked, place them evenly into middles of flatbread, topping with cheese, tomatoes, spinach, salt, pepper and basil.
Brush olive oil on outside of flatbread, then fold one half of the flatbread circles over, using olive oil and soaked toothpicks to hold in place.
Bake in oven at 450 degrees 5-6 minutes. Cut in half to serve.
