Creole Black Beans & Sausage Recipe

CREOLE BLACK BEANS & SAUSAGE

2 lbs. sausage/bratwurst
2 cans black beans, rinsed
2 onions, chopped
3 ribs celery, chopped
1 green pepper, chopped
1 cup water
1 8 oz. can tomato sauce
1 tablespoon garlic, minced
2 teaspoons thyme
1 teaspoon oregano
1 chicken bouillon cube
1 teaspoon black pepper
2 bay leaves Rice (to serve)

In a large skillet over medium-high heat, sauté the sausage with one of the chopped onions until slightly brown. Transfer to a 5-qt. slow cooker, adding all remaining ingredients other than rice. Cook on low for 6-8 hours, and serve with white or brown rice. (6-7 servings)

    At about 11:30 pm, April 21st, a vehicle crashed into the front door of Erie High School. According to USD 101 Superintendent Steve Wolf, a 16-year-old male from St. Paul drove a pickup truck through the hallways of the school. The incident damaged doorways, walls, furniture and the antique Richey's Drug Store soda fountain. The Erie Police Department arrested the teen at the scene. School officials are working to get the scene cleaned up in time for class on Monday. h...More >>

    1 T olive oil 1 shallot, coarsely chopped 1 bunch scallions (6-7), chopped ½ tsp sugar 1 cup strained Greek yogurt Salt, pepper to taste Heat oil in skillet over medium heat…add shallots and sugar, sautéing for about five minutes.  Add scallions, reduce heat, and cook for 2-3 minutes longer. In separate bowl, combine yogurt, salt, and pepper.  Add scallion and shallot mixture, stirring evenly.  Drizzle with olive oil and top with fresh herbs.  ...More >>

    Sweet Potato Crock Pot Oatmeal1 cup steel cut oats2 cups milk or almond milk1 1/2 cups water1 medium sweet potato, diced (and peeled, if desired)1 tsp cinnamon1/2 tsp allspice1 1/2 tablespoons local honeySea salt to tasteCombine all ingredients except for the honey and salt in the slow cooker, and cook on "low" for 5-6 hours (maximum 7 hours).  Stir well, then serve with drizzle of honey and sea salt to taste.*Makes an ideal overnight crock pot dishMore >>
