Green Beans & Balsamic Tomatoes Recipe

GREEN BEANS WITH BALSAMIC GARDEN TOMATOES


1 pound green beans
2 teaspoons olive oil
2 cups tomatoes, coarsely chopped
½ teaspoon garlic
2 tablespoons balsamic vinegar
1/6 cup crumbled cheese of your choosing (feta, blue, etc.)
Salt and pepper to taste

Boil water on stove over high heat. Add green beans, cooking for 5-6 minutes or until crisp-tender. Remove beans from water, and set aside.

In separate skillet, heat olive oil over medium heat. Add tomatoes (you can use halved grape tomatoes, quartered cherry tomatoes, or chopped slicing tomatoes—whatever you prefer) and garlic to pan, stirring and cooking for five minutes. Add balsamic vinegar, cooking for another three minutes, then remove from heat.

On a platter, arrange green beans. Top with tomato mixture, then sprinkle with cheese, and add salt and pepper to taste. Ideal pairings include charcuterie, duck or fried eggs.
