Toasted Caprese Flatbreads Recipe

Updated:
TOASTED CAPRESE FLATBREADS

8 small flatbreads (naan or pita work best)
2 tablespoons balsamic vinegar
2 teaspoons extra virgin olive oil
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon minced garlic
4 cups sliced or chopped fresh tomatoes
8 oz. fresh, whole milk mozzarella (alternatively, 8 oz. crumbled feta or blue cheese)
1 cup thinly sliced fresh basil

Heat skillet on stovetop over medium-high heat.  Toast flatbreads 1-2 minutes per side, set aside.

Combine vinegar, oil, salt, pepper and garlic in a bowl, stirring vigorously with a whisk to emulsify the mixture.  Add tomatoes to bowl and toss to coat.  Divide tomato mixture evenly among flatbreads, topping with slices (or crumbles) of cheese, then basil.  Serve immediately to keep flatbreads from getting soggy or mushy.
