Vegetarian Bean Stew Recipe

VEGETARIAN BEAN STEW

1 pound dry pinto beans, soaked
6 cups water
1 medium onion, chopped
1 medium red bell pepper, diced
2 stalks celery, sliced
1 cup frozen corn, thawed
2 cloves garlic, minced
2 tablespoons chili powder
2 teaspoons ground cumin
2 tablespoons lime juice
1 minced jalapeno
1 1/2 teaspoons salt

Garnish:

2 radishes, thinly slices
Fresh cilantro to taste

Soak beans beforehand at room temperature for 12-24 hours beforehand. Use a 5 quart slow cooker. Add beans, water, vegetables, chili powder, and cumin. Cook on high for 4 hours, or low for 8 hours. Before serving, stir in lime juice and salt to taste. Garnish with radish slices and cilantro, if desired.

    1 T olive oil 1 shallot, coarsely chopped 1 bunch scallions (6-7), chopped ½ tsp sugar 1 cup strained Greek yogurt Salt, pepper to taste Heat oil in skillet over medium heat…add shallots and sugar, sautéing for about five minutes.  Add scallions, reduce heat, and cook for 2-3 minutes longer.     Sweet Potato Crock Pot Oatmeal1 cup steel cut oats2 cups milk or almond milk1 1/2 cups water1 medium sweet potato, diced (and peeled, if desired)1 tsp cinnamon1/2 tsp allspice1 1/2 tablespoons local honeySea salt to tasteCombine all ingredients except for the honey and salt in the slow cooker, and cook on "low" for 5-6 hours (maximum 7 hours).  Stir well, then serve with drizzle of honey and sea salt to taste.*Makes an ideal overnight crock pot dishMore >>
