CROCKTOBER: Mexican Casserole Recipe

CROCK POT MEXICAN CASSEROLE
1 package 8 inch flour tortillas
1 box Spanish rice (cook as directed)
1 16 oz can refried beans
1 lb hamburger (cooked)
1 package chili seasoning or taco seasoning
1 16 oz jar salsa
16 oz shredded Mexican cheese
1 jar queso
Salt & pepper to taste

Cook your spanish rice as directed on the box. Brown your hamburger and add your choice of either chili seasoning or taco seasoning.

Line the bottom of crock pot with 1/2 jar of salsa. Place 2 tortilla shells on top of salsa. Then smooth the can of refried beans over the tortilla shells and take 1/4 of shredded cheese sprinkle over refried beans.

Then cover with 2 more tortilla shells. Spread your cooked spanish rice over the tortilla shells and sprinkle with 1/4 of shredded cheese. Cover with 2 more tortilla shells.

Spread the salsa over the tortilla shells then add your cooked hamburger on top of salsa. Sprinkle remaining shredded cheese.

Cook on high until your casserole is heated through. Garnish with the queso and enjoy. You may also garnish with lettuce, tomatoes and onions.

    The Wyandotte Nation is searching for the next Chief of Police, according to the Wyandotte Tribe of Oklahoma. Ken Murphy has resigned his position as Chief of Police of the Wyandotte Nation Tribal Police Department (WNTPD) after serving in the position for nine years. Officer Faron Lee, who has served with the department for eleven years, will serve as Interim Police Chief.
