Chicken Tikka Masala Recipe

CHICKEN TIKKA MASALA (BUTTER CHICKEN)

3 Boneless Chicken Breasts
Kosher Salt
Ground Coriander
Cumin
1/2 cup Plain Yogurt
6 Tablespoons Butter
1 whole Large Onion
4 cloves Garlic
1 Tbs Ginger
4 Tbs Garam Masala
1 teaspoon chili powder
1 teaspoon ground cumin
1 bay leaf
Pinch of Cayenne Pepper
2 TBS Pepper,  jalepeno or serrano, seeded, chopped
1 can (28 Ounce) Diced Tomatoes
2 teaspoons lemon juice
Sugar
1-1/2 cup Heavy Cream

OPTIONAL:
Fresh Cilantro
Fenugreek

Season the chicken breasts with salt. Mix coriander, cumin and yogurt  Marinate for a few hours, Broil chicken 7 minutes per side.

Dice onion. In a large skillet melt 2 tablespoons butter. Saute onions, add minced garlic until they are slightly browned.  Add garlic, ginger. Add ½ tablespoon of salt.

Add Garam Masala, chili powder, ground cumin and bay leaf. 

Dice and add peppers if desired.  Add diced tomato and sugar, lemon juice and let simmer for at least 10 minutes.

Add in the 1 ½ cups of heavy cream. Chop chicken into chunks and stir into sauce.  Add a handful of chopped fresh cilantro or palm of crushed fenugreek. 

Serve with Basmati Rice and Peas and/or Naan bread.
