Asparagus Frittata Recipe



6 fresh eggs 

1 pound asparagus 

12 oz. cottage cheese (small curd) 

1 medium red onion, sliced thinly 

1 cup queso fresco, sliced thin or crumbled 

½ teaspoon salt 

1 tablespoon light olive oil 

Herbs to dress (chives, basil, sage) 

Heat oil in skillet over medium-high burner. Add thinly sliced onion, and cook until translucent. Add asparagus and salt, and cook just until tender, about 2-3 minutes.

Beat eggs and cheese together in separate bowl. Combine egg and cheese mixture with sautéed vegetables in a greased 9-inch round glass pie plate, topping with queso fresco. Bake until mixture is set (about 10-14 minutes) in 350-degree oven. Before serving, top with snipped chives, or other herbs as desired.
