Basil-Infused French Omelette Recipe

BASIL-INFUSED FRENCH OMELETTE
2 fresh eggs
1 tablespoon water
3 stems fresh basil
1 teaspoon canola oil
Shredded cheese (if desired, to taste)
Salt & pepper to taste

Heat skillet over medium-high burner. Add oil. Whisk eggs together with water.  Once oil is heated, add egg mixture and stir constantly for about 20 seconds.  After 20 seconds has passed, add basil leaves to egg.  When egg begins to show bubbles, draw sides of omelette together towards center, and slide onto serving plate.  Top with salt, pepper, and shredded cheese if desired.  Serve warm.

    1 T olive oil 1 shallot, coarsely chopped 1 bunch scallions (6-7), chopped ½ tsp sugar 1 cup strained Greek yogurt Salt, pepper to taste Heat oil in skillet over medium heat…add shallots and sugar, sautéing for about five minutes.  Add scallions, reduce heat, and cook for 2-3 minutes longer.     Sweet Potato Crock Pot Oatmeal1 cup steel cut oats2 cups milk or almond milk1 1/2 cups water1 medium sweet potato, diced (and peeled, if desired)1 tsp cinnamon1/2 tsp allspice1 1/2 tablespoons local honeySea salt to tasteCombine all ingredients except for the honey and salt in the slow cooker, and cook on "low" for 5-6 hours (maximum 7 hours).  Stir well, then serve with drizzle of honey and sea salt to taste.*Makes an ideal overnight crock pot dishMore >>
