Garlic Lettuce Stir-Fry Recipe

GARLIC LETTUCE STIR-FRY

2 tsp. rice vinegar
½ tsp. sugar
1 tbsp. light soy sauce (reduced sodium)
¼ tsp. salt
1 tbsp. vegetable oil
4 garlic cloves
1 heart of romaine lettuce

Peel and smash garlic cloves into a paste. Cut lettuce into 1-inch strips. Heat wok over high heat. Whisk together vinegar, sugar, soy sauce and salt. 

Once wok is hot, add oil and garlic, cooking very briefly (5-10 seconds). Add lettuce. Stir-fry for no more than two minutes. Adding the sauce, stir over heat for another 30 seconds. 

Remove from heat. Serve immediately with sea salt and sesame seeds.

    Sweet Potato Crock Pot Oatmeal1 cup steel cut oats2 cups milk or almond milk1 1/2 cups water1 medium sweet potato, diced (and peeled, if desired)1 tsp cinnamon1/2 tsp allspice1 1/2 tablespoons local honeySea salt to tasteCombine all ingredients except for the honey and salt in the slow cooker, and cook on "low" for 5-6 hours (maximum 7 hours).  Stir well, then serve with drizzle of honey and sea salt to taste.*Makes an ideal overnight crock pot dishMore >>
