Goat Sausage Scramble Recipe

GOAT SAUSAGE SCRAMBLE & ROASTED POTATOES

Potatoes:

1-2 Lbs. small potatoes
1 t olive oil
1 t salt
1 t cracked black pepper

Preheat oven to 450. Wash potatoes thoroughly, pat dry.  Toss in baking sheet with olive oil, salt, and pepper, and bake at 450 for 25 minutes or until skins of potatoes begin to wrinkle.  Once removed from oven, let sit for 5 minutes.

While potatoes are baking...

Goat Sausage Scramble:

4-6 links goat breakfast sausage
1 onion, sliced
5 eggs
1 tomato, sliced
Shredded cheese (or crumbled goat cheese) to top

Over medium-high heat in skillet, cook sausage and onion until sausage is evenly browned (about 8-12 minutes). Remove links (or patties) from skillet and cut into bite-sized pieces.  Add pieces back to pan.  Beat eggs in small bowl, add beaten egg to skillet and cook until desired done-ness of eggs (3-6 minutes).  Remove from heat, and place slices of tomato on top of scramble, covering with cheese.  Serve alongside roasted potatoes while still hot.
