Crockpot Apple Crisp With Warm Vanilla Sauce (airing today)

3 Tbsp. sugar                                                                                                                                             
1 Tbsp. flour                                                                                                                                             
1 tsp. ground cinnamon                                                                                                                                              
 8 Granny Smith apples (about 2-1/2 lb.), peeled, sliced                                                                                                                                            
12 gingersnaps, crushed                                                                                                                                              
3/4 cup quick-cooking oats                                                                                                                                            
1/2 cup chopped PLANTERS Pecans                                                                                                                                            
1/4 cup butter or margarine, melted                                                                                                                                          
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding                                                                                                                                          
1/4 tsp. ground nutmeg                                                                                                                                             
3 cups milk                     
                                                                          
Mix sugar, flour and cinnamon in large bowl. Add apples; toss to coat. Place in slow cooker. 
Combine cookie crumbs, oats, nuts and butter; sprinkle over apple mixture. Cover with lid. Cook on HIGH 2 to 2-1/2 hours (or on LOW 3 to 5 hours).
Beat pudding mix, nutmeg and milk in microwaveable bowl with whisk 2 min. Microwave on HIGH 2 min., stirring after each minute. Spoon over individual servings of dessert.

Crock-Pot Cheesy Potatoes

2lbs frozen hash browns
1/2 cup melted butter
1/2 lb shredded cheese (we doubled it)
onion
1 can cream of chicken soup
16 oz sour cream
1/3 cup milk
1 tsp salt

Combine all ingredients into slow cooker and cook 2 1/2-3 hours on high.

Italian Beef Sandwiches

3 lb. rump or chuck roast
1 envelope Italian mix
1 t. oregano
1 t. basil
1 t. red pepper flakes
1 t. dried parsley
1 lg. garlic clove, smashed 
¾ c. beef broth

*Combine spices and broth
*Pour over roast
*Cook on high 6-8 hrs. or until meat is tender (depending on crockpot)
*Shred meat & let simmer for another 10-15 minutes
*Serve on Italian rolls

(great topped with provolone or mozzarella cheese and banana peppers)

Pittsburg Farmers Market: Crock Pot Breakfast Casserole

6 farm fresh eggs
3 tablespoons milk or almond milk
1 container plain Greek yogurt
1/3 cup mushrooms
1 cup spinach
1 cup shredded cheese
1/2 tsp salt
1 tsp garlic power
1/4 tsp pepper

Coat slow cooker with cooking spray. Combine egg, milk, and seasoning in crock pot.  Whisk vigorously. Layer in vegetables.  Cook on low for 5-6 hours (no more than 7 hours)...layer cheese on top 10 minutes before serving.  Slice and serve topped with green onions.
