Meatloaf in a Mug

¼ pound lean ground beef

1 Tablespoon ketchup

1 tsp. dry onion soup mix

2 Tablespoons 2% milk

2 Tablespoons quick oats

Combine all ingredients. Put into microwave-safe

mug or custard cup. Make a small hole in the

center all the way to the bottom. Microwave for 3

minutes or until done on High (100%). Drain any

fat. Let stand 3 minutes. Serves 1.

For two: Double ingredients and place in 2 mugs.

Microwave for 5 to 6 minutes on High.

Nutrition Facts/Serving: 1 serving equals 248 calories,10 g fat,

(4 g saturated fat), 72 mg cholesterol, 440 mg sodium, 14 g carbs,

1 g fiber, 24g protein. Diabetic Exchanges: 3 lean meat, 1 starch.
