Sauteed Scallion Dip


1 T olive oil
1 shallot, coarsely chopped
1 bunch scallions (6-7), chopped
½ tsp sugar
1 cup strained Greek yogurt
Salt, pepper to taste

Heat oil in skillet over medium heat…add shallots and sugar, sautéing for about five minutes.  Add scallions, reduce heat, and cook for 2-3 minutes longer.

In separate bowl, combine yogurt, salt, and pepper.  Add scallion and shallot mixture, stirring evenly.  Drizzle with olive oil and top with fresh herbs.  Serve with crudités, endive.
