Soy Good Cookies - KOAM TV 7

Soy Good Cookies

Updated:

· ½ cup soy flour

· ½ cup oat flour

· ¾ cup quick rolled oats

· ½ teaspoon baking powder

· ½ teaspoon baking soda

· ½ teaspoon salt

· ½ cup sugar

· ? cup canola oil · ? cup vanilla soy milk

· ½ teaspoon vanilla extract

· 1 small banana, mashed · ¼ cup chopped, roasted, salted soybeans

· ½ cup semisweet chocolate chips •

1. Preheat oven to 350 F.

2. Combine first seven ingredients (through sugar) in a bowl.

3. Whisk together oil, soy milk, vanilla and mashed banana.

4. Add wet mixture to dry ingredients; stir to combine.

5. Fold in soy nuts and chocolate chips.

6. Line a baking sheet with parchment paper.

7. Scoop dough onto baking sheet with a cookie scoop.

8. Bake 15–18 minutes or until golden brown, turning baking sheet halfway through.

Makes 18 cookies (1 cookie per serving)

Let cool on a wire rack.
