Soy Blessing Bread
Ingredients:
- ¾ cup coconut oil
- 1/3 cup vegetable oil
- 3 eggs
- 1 ½ cup brown sugar
- 2/3 cup granulated sugar
- 1 cup mashed banana
- 1 teaspoon vanilla
- 2 ¼ cup all-purpose flour
- ¼ cup soy flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ¾ teaspoon cinnamon
- 1 ½ cup mukimame, cooked and ground (edamame)
Directions:
- Combine oils, sugars and egg in large bowl.
- When these are creamed well add banana and vanilla.
- Mix well.
- Sift together flour, soy flour, baking soda, baking powder and cinnamon; add to creamed mixture.
- Stir in edamame.
- Pour mixture evenly into two greased 8x4 -inch loaf pans.
- Bake at 350 degrees for 50 to 60 minutes.
