Nu-Train's Recipe of the Month: Turkey Cutlets with Cranberries

By Heather Bauer, R.D., nu-train

Though there are no magic foods that erase stress and immediately induce sleep, there are components of foods that may help. Tryptophan is an amino acid that is a precursor of serotonin, a neurotransmitter in the brain, which naturally enhances sleep. In addition, vitamin C has been found to help reduce both the physical and psychological effects of stress on the body.

This recipe, which is perfect for the holidays, contains both of these components. The turkey contains tryptophan, and the cranberries and orange juice contain vitamin C. Plus, the recipe is delicious, easy, and quick!

Serves 4

Ingredients:

  • 4 Turkey Cutlets (approximately 4-5 ounces each)
  • Salt and pepper, to taste
  • 1/2 cup sliced onions
  • 1 cup dried cranberries
  • 1 cup orange juice
  • 1 teaspoon apple cider vinegar

Directions:

  1. Preheat oven to 350°F.
  2. Spray a roasting pan with cooking spray. Place the cutlets in the pan, and season with salt and pepper. Top with onions, cranberries, orange juice, and vinegar.
  3. Bake for 25 minutes, or until no longer pink.
