Red, white and blue tart

Ingredients

  • 1 ¼ cups graham cracker crumbs
  • ¼ cup margarine, melted
  • ¼ cup sugar
  • 2 packages (8 oz each) soy cream cheese, softened
  • 2 teaspoons vanilla
  • 1 ¾ cups powdered sugar
  • 1 cup strawberries, sliced in half
  • ½ cup raspberries
  • ½ cup blueberries
  • 1/3 cup red currant jelly

Directions

  1. Mix graham cracker crumbs, sugar and margarine in small bowl until well blended.
  2. Press onto bottom and sides of 9-inch tart pan.
  3. Refrigerate while making filling.
  4. In large mixing bowl, beat cream cheese, vanilla and powdered sugar until smooth.
  5. Spread over crust.
  6. Arrange strawberries, blueberries and raspberries.
  7. Heat red currant jelly for about 30 seconds in microwave.
  8. Brush fruit with jelly and drizzle over top of a dessert for a glaze.
  9. Cover and refrigerate about 2 hours before serving.
  10. Remove sides of pan and place on serving dish.

Serves 6 to 8
